It all depends on what kind of deployment you're talking about. If you're talking about the typical HTML style of use, WebObjects will support anything a web browser can do - it all depends on how much you want to customize the objects that generate that HTML.

If you're talking about client side Java, you can use any kind of UI widget available, but again - it depends on how much you want to code. You should be aware, however, that client side Java technologies are not often used with WebObjects, and not well supported. There are, however, a number of people on this list that could help you with that if you so desire.
