Please check out the podcast, WebObjects Worx, in the iTunes Podcast Directory. Take a look here: http://autreyrealestate.com, that is a site with a complete CMS system that I built with WebObjects. I can tell you how to view the administrative features off-list if you're interested. But yes, WebObjects is perfect for building a CMS system.

Joshua Markers Visual Quick-Pro Guide is a great start as well as the tutorials offered in the Apple Documentation. The podcast and offered video training is great as well.
