Beginners question: three-tier app with cocoa client

Hi,

I'm new to WebObjects and web application development. I've read quite a few things, but now I'm stuck in questions of the general application layout.

As I see it, in WO, I can either choose between a Java Client application, or a Web application which is accessed through a web browser. In my case, I'd rather prefer a Cocoa/Objective-C application on the client side, because I'll have a high amount of user interactivity. In the WO documentation, I couldn't find the 'link' between the java/server-side world and a possible Cocoa/client- side application. What have I missed here?

Or, to put it in other words: I've read that WO is the technology behind the iTunes Music Store. The iTunes application itself is pure Cocoa, I guess. But what is actually connecting the two?
