We deploy 5.3.1 WO apps in production on Mac OS X Server/PPC.
But, I don't know about Windows, etc. for the 5.3.1 version.
There is no (released) Mac OS X Server/Intel so you can't deploy to that (yet).
P.D.: We want to see the news or surprises in WWDC 2006?
