... when you "Add" something to a project ("Project" -> "Add to project..."), after you select a items to add (one or more forlders in the case you describe), you'll get a dialog which offers a choice of:


"Recursively create groups ..." OR "Create Folder References for ..."

choose the latter and you'll get a little blue folder in the XCode outline view (the brown folders are groups - cosmetic only). But be aware, the folder reference is what XCode manipulates, so the folder will be moved by XCode. That means your images in the Web Resources destination will be stored in a folder with that name.
