Actually, exactly, this has been done in WebObjects. Apple wrote one for .Mac. I'm sure it is based on the JavaMail API. However, the possibility of getting your hands on that is...well...nil.

Interesting project. I'm sure many pieces of this has already been created by various WebObjects developers. Good luck in your endeavors.

I have some experience with JavaMail for sending mail, but doing a full client will be a good deal more work.
