I know that it is possible to set the session timeout to a very large
number so the user is unlikely to ever see a session time out.  Is it
also possible to change it dynamically, so that once the user starts

Just guessing, but this is probably not to do with session timeouts in an individual session. I'd say that what is happening here is that the previous request is still in the WOA doing something time consuming and so the adaptor is not able to push through the subsequent request fast enough, assumes the instance to be down and tries another instance at which it is obviously not able to find the session so calls it a timeout. Probably due to load, but it's often a hard one to find a perfect and also generic answer for.
