You can make it even more convenient than that:

cd /Library/WebServer/Documents
ln -s /path/to/your/images

This has the same effect, but lets your images etc remain where they were checked out from source control. Any changes are automatically reflected in the browser; you don't need to remember to update the copy.

Just keep in mind that the apache webserver has to have read (and execute) access for any directory on that path.
