There is no way to do this dynamically, via a binding. I am not sure if one of the Project Wonder extensions does this.

Are you trying to do this by editing your page with WebObjects Builder? In WOB, you can select a cell and there is a checkbox in the inspector (the (i) button) for marking it as a header cell.
