How can I create WO project on Xcode 3.0 ?
There's no WebObjects option in Project Templates!

Eclipse/WOLips is now the default toolset :-) You can manage part of a WO project in XCode, but the project templates are gone. And since EOModeler and WO Builder are gone, using XCode just to build apps is not really useful.
