Joe,
The deployment doc was referring to the example ant build system that
was shipped with Xcode 3.0 although the same can be said for the
woproject ant build system. We are encouraging people to work with
the WOProject/WOLips development/deployment tools and help improve them.
The terminology is different in woproject, see:

Eventually we are planning to extend the WO File Format reference to
describe the various deployment bundle types:

I'm basically hoping for clarification on how one does get
single-bundle WOA deployments in the new 100% eclipse project world,
and what steps, if any, are needed to bring an imported project
forward.
