Try this:
http://wiki.objectstyle.org/confluence/display/WOL/Scratch+Setup+of+WebObjects+Development+on+a+Mac

And specifically try the tutorials here .... the technology and tools is advancing at such a rapid pace, it is hard to keep documentation current...
http://wiki.objectstyle.org/confluence/display/WOL/Tutorials

Currently there is a transition underway between:

Eclipse 3.3.2 -> 3.4.1
WOLips stable -> nightly (very different!)
WO 5.3.3 -> WO 5.4.3

The fact that significant portions of the community are in the above transitions can lead to confusion in the docs .... however if you are starting off, go for Eclipse 3.4.1, WOLips nightly and WO 5.4.3 I guess ....

The transition to Leopard is over and Java 1.5 is the supported version of java which is already prebundled with Leopard 10.5.X and you don't have to do anything special to configure java AFAIK.

What's the magic way to run this on 10.5.5? What version of the VM do
you need? What should there search order in Java Preferences? What
version of Eclipse? I can't get it to run at all. I can from the
command line though.
