Along with the other good advice you have been given, I will mention our Virtual Tables framework. It allows you to create new EO-like entities and objects on the fly. These can't have any code, but have full KVC access like normal EOs. They work fine for small to moderate data sets. For larger ones, you will probably find the performance inadequate.
