It will. Period. Not that you won't enjoy it - but there really is much to learn :)
After all, two years experience with PHP/Rails, in the scheme of things, ain't a lot really[1]. You'll need to learn OOP (which Ruby would have helped with... but Ruby is not Java), and Java if you've not done so already. That in itself is a bit to learn.
Be prepared to work hard at it to get the reward. Ask lots of questions on the lists - as there's lots of people on the list willing to help. Again, ask questions... you want to start doing stuff the right way so you're not swimming in deeper waters than you know how to get back from.

Sure, and it's quite a different environment. I've done some RoR in the past. There's some overlap of course conceptually, but don't expect to be up to speed in six months. Just walking maybe. ;-) Be realistic.

For various things, yes. Depends on the problem.

[1] I think the average WO use on this list based on the last few surveys (Pascal can provide exact numbers) is over 6 years. And there's no way around the fact that it just takes time to work up a more-than-skin-deep knowledge of something of worth. _______________________________________________
