You have several options, three of which are:
1) Learn ObjC/C++ and Cocoa
2) Use one of the several ported APIs, either X or Qt, and leverage
your
existing knowledge
3) Learn HIViews under Carbon with C/C++
You can also take advantage of fink, which has an implementation of

prototyping. It has bindings to many (high-level) languages, so you
can create fully functional, cross-platform, applications an order of
magnitude faster than using most other environments.
