You need to install the placeholder xfree86 package - it should be displayed next to the package you tried in Fink. This also required the X11 SDK, available at http://www.apple.com/macosx/x11
The package is trying to install a complete Xdarwin package, which uses many of the same files as apple's X11 package. dpkg is telling you about the conflict between the two; the placeholder package is designed to allow Apple's X11 and Fink to coexist peacefully.
