It seems to only pick up certain keyboards. Is there a way to make it

Russian or Greek for example?
Russian and Greek work fine for me, selecting either of those in the
input menu, then typing in an X application correctly switches the X
keymap to contain keysyms startting with Cyrillic_ and Green_
respectively (you can use "DISPLAY=:0 xmodmap -pke" from a Terminal
window to check this - note that after changing the input menu X
doesn't update its keymap until you subsequently type in an X window)
However, it's possible that not all X applications will be able to
handle these keysyms, or may not be using a font that defines glyphs
for them. Try a GTK2 application with a font known to contain the
correct glyphs.
