You might want to visit the OOo Mac Testing forum at

where the solution was posted the day after X11 was announced;)
Based on your error message, you have OOo installed at
Applications/OpenOffice.org1.0.1. So all you have to do is add an
application to the X11 Application menu with a command of
Applications/OpenOffice.org1.0.1/program/soffice
FWIW _all_ of the launching instructions and scripts that came with the OOo
"final beta" are for running OOo in XDarwin (or OroborX). The OOo "final
beta" and Apple's X11 were released on the same day. Unfortunately the OOo
team knew nothing about Apple's X11 prior to its release:( Hence the lack of
X11 specific instructions/scripts.
