Well, specifically for xterm, just do a
man xterm
In general, the man page for any X11 application should describe the
available switches and resources. For the general picture,
man X
man XFree86
are a good start, and http://www.xfree86.org is even better. The interplay
between .Xresources, .Xdefaults and the like should be described in the man
page for xrdb (which you can use to reload, merge, or replace new
resources).
As for the truetype thing, the man page for Xft says the format of the file
XftConfig may change in the future... So, caveat emptor there.
