Not exactly true; with the method you're using, the application must
have support for the Xft font library, which isn't true of Emacs at
the moment, I believe.

I don't have a Mac to hand; what happens when you do the following?

  cd /System/Library/Fonts
  sudo mkfontscale
  sudo mkfontdir
  xset +fp /System/Library/Fonts
  xterm -fn '-*-monaco-*'

If the xterm succeeds, the the Xserver can read TrueType files in the
format shipped by Apple, and supply them as core fonts, i.e, such that
Emacs will understand how to use them.
