In an xterm, you can type: man xterm
You'll see a list of options somewhere in there. For what you
suggested, it looks like -bg and -fg will help you out.
I use Eterm and find the default settings to be quite usable. But then
again, I run Blackbox instead of quartz-wm since I think that Aqua is
ugly (and wish every day that they would make it a bit more
customizable, without tinkering in ways that can mess up your
installation). To each his own.

Regarding xterm variables:
Is there a good site where I can learn what the different xterm
variables are and how to set them?
For example: I hate black text on a white background. I would love to
set my xterm to resemble my Terminal.app. Also, what about colorizing
the output? Isn't there a way, other than replacing the "ls" binary
http://www.osxzone.com/pages.php?page=H4X ) to get color output from a
simple ls command?
Oh, and BTW, I am using bash not tcsh, if that matters.
Thanks
