The method you're trying is designed to assign a default application to
a particular file type (i.e, document). In this case, what you're
basically doing is trying to tell OpenOffice to launch X11 to launch
OpenOffice.
What you'll need to do is to put OpenOffice in the X11 Applications
menu. You do this by going to the 'Customize..' item in the menu,
then clicking the 'Add' button. You'll then type a name in the
left-hand field (presumably 'OpenOffice'), and in the right hand field
you will enter the complete file path to the OpenOffice application.
That will be something like '/Applications/OpenOffice/ this file'
(sorry, while I've experimented with OpenOffice, I don't have it on my
own machine, and I can't tell you the exact name of the OpenOffice
folder, or the specific file in the folder that you use. I am also
presuming that /Applications is where you put the OpenOffice stuff).
Of course, this means that X11 has to be running first. You can put
X11.app in your Dock for convenience, or even put it in your Login
Items to start automatically.
