So, I have to download and install fink to get these programs?
What else does fink get me? ( Or is that to big a question to answer in
one email?)

Careful. Do not confuse the terms.
emacs = fsf emacs
xemacs = originally lucid emacs, now just known as "xemacs"
Both have x11 and terminal modes!
They remain separate projects for political reasons.
The emacs shipped with panther is emacs, without an X11 mode compiled
in.
"fink install emacs21" installs an emacs that *has* an X11 mode
compiled in.
"fink install xemacs" installs an xemacs (with x11 mode).
