You can use something like
ssh -Xf remote.host /path/to/my/app
which will authenticate the SSH connection, fork to the background, and
display the remote app on your Mac. This means you have no terminal
window which you might accidentally close and destroy the remote app in
the process.

If you mean that you actually want the app to run even when there is no
display, that is different. For terminal based apps, try nohup or screen,
for X apps, maybe VNC will allow you to disconnect from a X app and keep
it running?
