Try
sudo /bin/zsh
at the prompt, make sure you’re using an administrator account, and give
that account’s password. The people writing those instructions were thinking
in terms of other Unixes, and OS X does this aspect of things better.

The password it asked you for in response to the su command was your
machine’s root password. You can set that, but don’t bother; do the sudo
command above any time it’s suggested that you become root.

I’m sure there’s something to be had, but if using coming across su command
and not understanding how it works is the biggest obstacle you’ve seen,
you’re off to a good start.
