Multiple XQuartz Instances

I'd like to run multiple XQuartz instances. I mainly want to do this
so I can run different programs in each, and keep them in different
dock icons. I'd also like to run different programs with different
XQuartz settings.

Does anyone know how to run multiple XQuartz instances? I'm guessing
that they just need to be told to run on different DISPLAY values, but
I'm not quite sure how to do that.
