I don't use fink. I thought that they always used /usr/X11 ... I didn't realize that there was a way to have them use /opt/X11 instead. Is that what you did?
Based on your being unsure how to change "back", I really doubt that you actually changed it to use /opt/X11... otherwise, you would just need to change /opt/X11 back to /usr/X11 wherever you made that change the first time.
