Yeah, this is based on your launchd settings.  You'll need to logout and log back in for launchd to update the DISPLAY environment variable for the new server (you won't need to do it after subsequent installs).

By default, the system will prefer XQuartz.app since the LaunchAgent is in /Library/LaunchgAgents rather than /System/Library/LaunchAgents.

If you want to prefer X11.app instead, you should disable /Library/LaunchAgents/org.macosforge.xquartz.plist (see launchctl(3))
