Fink never used to install things elsewhere but /sw - unless there's a replacement for FinkCommander that gets installed rather than letting you put it where you want. So removing /sw ought to be enough - unless you have been building things not in Fink and installing them, say, in /usr/local, as I have done. That'll be up to you to figure out, but the good news is that you are not obliged to get rid of Fink in order to install MacPorts. The only thing to check is if you modified your (login) shell settings to add /sw to the path.
As to which one is better - off-topic on here, but should you consider that the best is the one taking up most disk space, MacPorts wins gloriously. My Fink install never got that big (but then it was so outdated by the time my ppc died that it couldn't even be auto-updated anymore).
