Multitouch isn't even in a released xorg-server yet, so that's not possible yet. If you're interested in contributing patches, you can try using the xorg-server master branch which just merged multitouch support a couple weeks ago (although that just means it's supported in Xi, not exposed by anything or used by any applications/frameworks yet).
If you want to use multitouch, you're bets off making a real Cocoa application...
