I found an cquartz_postindt.sh script but none of the /usr/X11
directories or files that it would remove are removed.
I'm not sure what you mean by this. Do you mean xquartz_postinst.sh
within the XQuartz package? It runs automatically when XQuartz finishes
installing, and you don't need to run it manually.
I need some assistance. I want to have X Windows server and client
installed on the system and accessible by all accounts on the system.
You need to provide more information about your problem.

PS Try 2.7.3_rc1 as it addresses a couple Mountain Lion issues.
