Change default program for a filetype

Mac X11 Aficionados,

I would like to change the default program that is used to open files of a particular extension.  I know that it can be changed to a bundled .app application (see [1]), but I can't find a way to use a command line application (like /opt/local/bin/gedit for .tex files).  Any tips?
