You mean running a full Gnome desktop in your X11 session?
I would begin by deactivating the X11 server auto-start using
#> launchctl unload -w /Library/LaunchAgents/org.macosforge.xquartz.startx.plist
or the same plist in /opt/local/Library/LaunchAgents if you installed XQuartz through MacPorts. I personally even delete those files afterwards.
Then, put XQuartz in your Dock, and use that shortcut to launch X11. If the instructions you followed were appropriate to start Gnome when the X server starts, you should be in business. If not, the server will quit and you'll have to figure out why.
You can probably do that by launching XQuartz by hand
#> /path/to/XQuartz.app/Contents/MacOS/X11
and looking at the output. Alternatively edit your ~/.xinitrc file by adding a single ( above the 1st line that's not a comment, and after the last line, adding
) > $HOME/.xinitrc.log 2>&1
That will send all the output from everything launched through that xinitrc file to a log file. My guess is that your Gnome install is missing something, possibly even the application that would normally "block" the X server (which quits when the .xinitrc script exits).
