Automate builds, same project, different SDKs -- how?

We have a project from which we wish have 2 builds -- one that is Puma (10.1.5) only, and one for the current OS. It seems that, to do this, we need to change the target SDK in between the builds.

However, we are doing the builds from the command line. Do I need to have 2 separate projects to do this? Or can I do it with one project and change setting/environment variable/something in between the builds?
