to use ssh instead of a pserver?

This checkbox is used to distinguish between rsh and ssh connections (CVS labels both with ext:).

No. What I think your situation is (could be wrong) is that you have a project in CVS but your Xcode project "file" is not in CVS. If that's the case and you want to use the CVS integration, you have two choices:
