I've been going through Aaron Hillegass's book Cocoa Programming for Mac OS X recently. It's pre XCode (which I realize was what you were asking about) but the project builder stuff is pretty easy to do in XCode, and it's a really good intro to Cocoa. It wasn't my first Cocoa book, but I wish it had been.
