For starters: C, C++, Objective-C, Java and AppleScript. The language you use though, is almost unlimited because you can choose your own build process or program. So for example, you can built yacc and lex code right in Xcode as well.

Possibly. If you've never programmed, BASIC is easier than C or C++. Real Basic does allow quite RAD (rapid application development), meaning you can draw your interface and simply put code behind the controls. This also has a tradeoff of course - your power and control is limited, and your application may run slower than if you wrote it in a C based language.
