Profiling on headless boxen?

Hi,

Is it possible to use shark to profile code running on a headless
box? In this case, the box in question is an xserve G5. It's not
clear whether you have to be able to start the shark gui in order
to use its remote facilities.

Alternatively, is there some other form of PMC based sampler that
spits out logs which shark can read?
