A partial answer: If you want to Replace all, you just do the search,
with the replacement string already filled in, and when the search is
done you click Replace button, upon which you will be asked if you wish
to replace x occurences. As soon as you click one of the search
results, the Replace button only acts on that single instance and
you'll have to redo the search if you want to replace all.

That does answer some of the mystery. But where's the "Replace and Find Next" functionality? It's in the menu, but as with the other menu items, using it results in a deleted target string instead of a replaced one.

I can't for the life of me figure out how to use the new Project Find
window.

* Type a string in the Find: field and a replacement string in
  the Replace: field.
* Click "Find"
* I get a list of the found occurrences in the top pane of the window.
* I select one of those occurrences, and click "Replace".
* I get a dialog asking me if I really want to replace it
EVERY SINGLE TIME. Now surely there's a way to turn that off?
* If I want to replace all, there seems to be no such option in the
  Project Find window.
* If I choose the menu item "Replace" instead of clicking the button,
Xcode ignores the text in the Replace: field, and instead *deletes*
the occurrence of the found string.
* Choosing the menu item "Replace All" also deletes the occurrence
of the found string everywhere, instead of replacing.

And I still haven't figured out how the round-ended Search window in
the toolbar works. It never finds anything I ask it to, and it
displays the mysterious grayed-out legend "File Name".

Is there some idea I am missing here?
