Where is the MyCompany Name set?

This may seem silly, but being a new user of the Xcode tools, I can't find where you can set the default for Company Name, copyright notice, and other strings that we want to include in various files that Xcode creates. Right now we are editing them for each project that is created, but would prefer to have these parameters set automatically whenever a new project is created. Since there are default strings already present, there must be someplace to edit these values.
