Since I did a clean install of Panther 10.3.2 I have only had one or two freezes. But I know how to avoid them, at least in C++. I have bound the "Compile" command to <apple>K. You know you are toast when the <apple>K just beeps instead of compiling. This means there is a rogue build in the background. At this point you can save everything, quit, and restart Xcode, and all will be well. My theory is that sometimes a build will give the appearance of terminating when in fact it has gone underground, creating untold havoc. I think it is a build on top of a hidden build that causes the freeze.
