Interface Builder has no such preference setting (exposed, anyway) to set which program to use when you select "Create Files for ..." from the Classes menu, and I see nothing in com.apple.InterfaceBuilder.plist that looks like it might fit the bill.

No there currently isn't. IB just calles the opendiff program to do the work.

Please file a bug request asking for this feature to be added to IB.
