Service Development

I am getting ready to write the first few lines of code within my first Mac development project. I was hoping someone might have some advice. I am a seasoned Microsoft developer AND SWITCHER and would like some advice as to where to begin.

THE PROJECT:
I need to write a service to run in the background and monitor a series of directories for files with certain extensions. When files matching a certain extension are found, I need to parse the files and store pieces of the files into a database.


MY CURRENT SKILLS:
As I am a .NET developer, I am most fluent in C# and VB.NET. I have also done some development last year using Java and WebObjects. As for databases, I am most fluent in SQL Server, however I do have a valid OpenBase license (Scott from OpenBase was kind enough to give it to me last year for personal development uses).


Any advice would be greatly appreciated, especially relating to language development, tools, or resources.
