I've put up some resources along these lines which might be useful.
These two are lists of languages which can be used to created compiled
Cocoa and Carbon programs:

(Note: The Carbon list should include Pascal, which I'll correct soon.)
There are many more languages which can be used to create GUI apps
on OS X, however, using, e.g., Tcl/Tk; by linking with other language
libraries; and by using different runtime environments. A list which can
give someone an idea of the great variety of options would be:

There may be some details which need corrections.
