build styles: why project based instead of target?

I'm having a hard time getting used to looking for build styles on the project. This seems very counter-intuitive to me. Why wouldn't these be on the target instead?

I mean I could have a project with many different targets correct? And the build styles might not apply to all those targets, but only to some of them. Besides, having the styles available when getting info on the target just seems easier.

Or is this something that I will grok as I get into Xcode?
