The second part of this question is, is there a place where all of these available target and project and compiler and linker settings are all summarized. I want a page I can look at, and either see what's available, or see where I can go if I'm looking for something > specific.

To see a listing, choose "Show Build Settings Notes" from the Help menu. This is a handy page and really helped me get an "underview". Another handy trick is to use 'env' (tnx G.Warner) in a shell script phase to see what's what when building.
