You may just have the "Customized Settings" collection selected in the
collections drawer (which only shows the build settings that have
non-default values). If you select all the collections in the
collections drawer, you will see all the available settings.

To answer your second question, yes, you can create your own build
styles, the "Development" and "Deployment" build styles are just the
ones we provide by default.
