If you install the j2ee stuff with dev tools ant, xdoclet et al is all bundled. The xdoclet version needs a change to support more than just ejbs and webservlets, but its been laid out nicely and you can just change a symlink to change to xdoclet version. I've had no need to change ant but its laid out in the same way.

In terms of alternative compilers I guess once you've got ant support you can set what you like.

I dont know AspectJ so i don't know what your exceptions will be, but xcode isn't like one of those full on swing based ide's that folk think are good. Its more a comfortable way of viewing your files and then firing ant up (much like bolting ant onto project builder). Personally I think xcode is better as it doesn't mess with your stuff like those other ide's but someone used to that sort of thing could be disappointed.
