Does XCode provide any way to search my entire collection of
installed frameworks for a particular symbol?


Yes, but you have to set it up. Two possibilities...

1) In the 'Find in Project' dialog, click the "Options" button (took me a while to notice it too)
'Add' a new Find Set
Turn on 'Search in Files and Folders'
Drag in the Frameworks folder
This approach makes Frameworks searching available at all times


2) Create a new empty project, then drag Frameworks into it.
	Whenever you need to do a search, open the project and Cmd-Shift-F.
