Currently there is no official way to add syntax coloring for
additional languages to Xcode. However, there have been discussions on
this list in the past that go over "unofficial" ways to add simple
syntax coloring support.
In addition, we currently have some support for PHP syntax coloring and
a function popup in Xcode. What exactly were you looking to add?
